As promised, here are the recipes for the tea sandwiches from my tea party. Both of these sandwiches are fairly easy to make, and they are really yummy. If you're not planning on throwing a party any time soon, that's ok. You can still enjoy these sandwiches, but just make life easy and cut them in half if you're not entertaining.
These Pimento Cream Cheese sandwiches would be a tasty alternative to a bagel with cream cheese for breakfast. Make them up the night before, and enjoy a fancy-ish treat before heading off to work.
The Smoked Salmon sandwiches would also be great for breakfast, actually. Personally though, I'd rather snack on these mid-day for a fun pick-me-up. Just make sure you keep them cold until you're ready to eat them!
I hope you try making these sandwiches, they are easier to put together than they look!

Pimiento Cream Cheese Tea Sandwiches
Ingredients
- 1 small jar of diced pimiento
- 1 cup plain cream cheese, softened
- 4-5 tablespoon mayonnaise
- 1 cup shredded extra-old Cheddar cheese
- Black or white pepper, to taste
- 1 loaf of white sandwich bread, do not use end slices
- Salted Butter, at room temperature
Instructions
- Empty the pimiento into a sieve and rinse under cold water. Set the sieve over a bowl and allow the pimiento to drain.
- In a separate bowl, beat cream cheese with mayonnaise until smooth.
- Squeeze any excess liquid from the pimentos with a paper towel. Add the pimento to the cream cheese mixture. Stir in Cheddar cheese, and season with pepper. Set the filling aside.
- Lightly butter each slice of bread, from one edge to the other, on one side. This will prevent the sandwiches from becoming soggy.
- To assemble the sandwiches, spread the filling on one piece of bread and top with a second piece of bread, pressing down gently. * Cut the crusts off the bread and cut each sandwich into triangles (or any other shape). Cover with a damp tea towel until your guests arrive.
- *If you are making the sandwiches ahead of time, cover them tightly with plastic wrap and keep them in the refrigerator. Chilling the sandwiches may make them easier to cut.

- ¼ cup chopped capers (drained)
- 1 tablespoon of lemon juice
- 1 teaspoon onion powder
- freshly cracked black pepper (to taste)

- 1 loaf of light Rye bread (do not use end slices)
