Instructions
Add a spoonful of yogurt to the bottom of each glass.
Add a layer of granola on top of the yogurt.
Add a layer of mixed berries.
Repeat the layers (yogurt, granola, berries) until the glass is full.
Finish with berries on top and a drizzle of honey, if using.
Serve immediately.
Notes
Ingredient swaps
Any thick yogurt works (I like Greek or Skyr). Try coconut yogurt for a dairy-free option.
Use whatever fresh fruit is in season, or use thawed frozen fruit.
Maple syrup can replace honey for the finishing drizzle.
Storage
Assembled parfaits (without granola) keep covered in the fridge for up to 24 hours. Add the granola right before serving so it stays crunchy.
Add-ins
Want to make it more indulgent? Add a few dark chocolate chips on top once assembled.
A sprinkle of chia seeds or hemp hearts stirred into the yogurt adds nutrition without changing the flavour much.
